Ranch BBQ Chicken Dinner

Ingredients

  • 4 (4 ounce) boneless, skinless chicken breasts
  • 1 cup Tropicana Pure Premium® Orange Juice
  • 2 seconds olive oil cooking spray
  • 3 tablespoons KC Masterpiece® Barbecue Sauce Original
  • 3 tablespoons Hidden Valley® Original Ranch® Light Dressing
  • 2 cups cooked brown rice
  • 2 cups cooked frozen chopped spinach
  • 2 tablespoons shredded Cheddar cheese, reduced fat

Instructions

Remove any fat from chicken breast and marinate in orange juice for 2–4 hours. Preheat oven to 350°F. Lightly coat a nonstick roasting pan with olive oil cooking spray. Combine barbecue sauce and dressing in small bowl. Remove chicken from marinade.

Using a pastry brush, lightly coat the chicken with sauce and place on the roasting pan. Bake for 15 minutes and brush with sauce again. Bake for 10 minutes, remove from oven and coat with remaining sauce.

Cook rice and spinach according to package instructions.

Spread ½ cup of spinach on dinner plate. Top with ½ cup brown rice, one chicken breast and ½ of the shredded Cheddar cheese.
