Savory Pear Salad
Ingredients
1/2 cup orzo, dry
1 cup raw pears, diced (1 medium or 2 small)
2 tablespoons orange juice
1 tablespoon fresh dill, chopped
2 teaspoons lemon juice
1/4 cup raisins
1/2 cup fresh tomatoes, diced
3 tablespoons Hidden Valley® The Original Ranch® Buttermilk Dressing
4 cups fresh spinach, shredded
2 tablespoons sliced Almond Accents
Preparation
Prep Time: 30 min.
Chill Time: 2 hrs.

Prepare orzo according to packaging directions. Drain and cool. Cut pear in quarters. Remove pit and stem. Dice pear(s) into small pieces. Place in small bowl and add orange juice. Allow to sit for 5 minutes. Combine 2 teaspoons fresh dill and remaining ingredients except spinach and almonds. Refrigerate for two hours. Place one cup of shredded spinach on four plates. Spoon equal amounts of pear salad on bed of spinach. Top with equally divided amounts of sliced almonds and fresh dill.
