cauliflower florets 4 cups

sugar snap peas, ends trimmed, stems removed and cut into 1-inch pieces 2 cups

diced red bell pepper ½ cup

minced red onion ½ cup

shredded red cabbage 3 cups

kosher salt and freshly ground black pepper to taste

1In a large bowl, combine the dressing, cauliflower, snap peas, bell pepper and onion. Chill covered for at least 2 hours, overnight is best.

2Season with salt and pepper and serve on a bed of red cabbage.
