rigatoni, cooked and cooled 1 box (16 ounces)

eggs, lightly beaten 3

whole milk 2 cups

finely shredded mozzarella cheese, divided 1 cup

frozen assorted vegetables 1 package (16 ounces)

red beans rinsed, well drained 1 cup

1Preheat the oven to 350°F.

2In a large bowl whisk the eggs, milk and seasoning mix until well blended. Fold in half of the mozzarella, all of the pasta, assorted vegetables, and beans. Spoon the mixture into an oiled 13x9x2-inch baking dish and top with the remaining cheese.

3Bake for 40 to 50 minutes. Let stand uncovered for five minutes before serving.
