AP flour ¾ cup

kosher salt and ground black pepper, to taste

eggs, beaten 2

panko breadcrumbs 1 cup

finely crushed Cheez-It® crackers 1 cup

string cheese, halved 12 oz.

vegetable oil, for frying 1 qt.

marinara sauce or Hidden Valley® Cheezy Ranch Dressing, for dipping

Set up a breading station. In a small shallow bowl mix the flour with plenty of salt and pepper. Add beaten eggs to a second bowl. In a third shallow bowl, combine the panko crumbs, the Cheez-It® crumbs and the ranch seasoning mix together.

Working one at a time, dip a piece of cheese into the egg mixture, followed by the flour mixture, then back into the egg mixture and finally into the breadcrumb mixture, pressing to ensure the crumbs stick.

Set the cheese stick on a parchment-lined baking sheet and repeat with remaining cheese. When all are prepared, freeze the sticks 30–60 minutes.

In a large pot set over medium heat, bring the oil to 350°F. When ready, gently drop a few cheese sticks into the hot oil. Cook until golden brown on all sides, about 2 minutes.

Remove from oil with a slotted spoon and place on a cooling rack set over a baking sheet. Repeat with remaining cheese sticks. Serve hot with dipping sauces.
