edamame, shelled ½ cup

green onions, chopped 3

baby spinach leaves 1 cup

small cucumber, peeled, seeded and sliced 1

chopped peanuts ¼ cup

kosher salt, to taste

1Cook the noodles according to package instructions. Rinse well in cold water and drain well.

2In a large bowl, add the noodles, edamame, green onion, spinach and cucumber. Toss the salad together with the dressing until lightly coated; season with salt.

3Top with peanuts and serve.
