Leftover Cooked Turkey, Finely Chopped 3 cups

lettuce and tomato 32 small pieces each

1Preheat the oven to 450°F. Place sliced bread on a large baking sheet and brush both sides with olive oil. Bake for 10 minutes until crisp and golden.

Meanwhile, place dressing into a mixing bowl, fold in the cooked turkey and set aside.

3Remove bread from oven and let cool slightly. Top each with a piece of lettuce, about 1 tablespoon turkey salad mixture and a half slice of tomato. Serve immediately.
