fresh or frozen corn kernels, thawed and drained 2½ cups

red onion, diced 1

cherry tomatoes, halved 1 cup

butter lettuce rinsed well and dried 1 medium head

kosher salt and freshly ground black pepper, to taste

In a large bowl, combine corn, onion and cherry tomatoes. Stir in dressing and season with salt and pepper, tossing until well coated.

2Arrange lettuce leaves on serving plates to make small cups. Spoon corn mixture into each of the lettuce cups; serve chilled.
