- 1 stick (4 ounces)
butter, plus more for greasing
- 1 seasoning packet or 3 tbsp of shaker seasoning
- 1 cup
chopped frozen broccoli, thawed
- 1 cup
corn kernels
- 3
eggs, beaten
- ¾ cup
cottage cheese
- 1 package (8½ ounces)
corn muffin mix

Preheat oven to 375°F. Grease an 8-by-8-inch baking dish.

In a large microwave-safe bowl, melt butter. Mixing after each addition, add the seasoning mix, broccoli, corn, eggs, cottage cheese and finally the corn muffin mix, stirring just until moist.

Transfer mixture to the greased baking dish. Bake for 30 to 35 minutes or until golden brown.
