asparagus, ends trimmed and cut into 1-inch pieces
- 1 ⅓ cups
fresh or frozen peas
- 8 oz.
sugar snap peas, trimmed and sliced into ½-inch pieces

large avocado, pitted and cut into large dice

soft-boiled eggs (optional)

Bring a pot of well-salted water to a boil. Add in the asparagus, and cook for about 3 minutes, until crisp-tender. Remove with a slotted spoon or strainer, leaving the water in the pot, and set aside.

Add the peas to the pot and cook for 2–3 minutes, drain and rinse under cold water or plunge into an ice bath to stop the cooking.

In each of four bowls, make a base of the grains. Arrange the cooked asparagus, cooked peas, snap peas and avocado around the grains.

Add a soft-boiled egg, if desired. Drizzle with the Green Goddess Ranch and garnish with sliced scallions. Serve immediately.
