hoagie rolls, toasted

Leftover Mississippi Roast, Shredded and Reheated
- 4 slices
provolone cheese

Preheat the broiler. Heat the oil in a large skillet set over medium heat. Add the onions and peppers and sauté until softened, about 6-8 minutes; then season to taste with salt and pepper.

Divide the leftover roast beef between the four rolls. Top with the pepper and onion mixture; then drape a slice of cheese over the top.

Arrange the sandwiches on a sheet tray cheese side up and place under the broiler for 2–3 minutes or until cheese is melted. Serve immediately.
