fresh mint leaves 4 tablespoons

diced tomato 1 cup

kosher salt ½ teaspoon

cucumber, peeled and diced 1

1In a large bowl, combine bulgur, corn, mint, tomato and dressing, and toss until well coated. Season to taste with salt.

2Chill covered for 1 hour before serving. When ready to serve, stir in the cucumber.
