white wine 1 cup

salmon fillets 4 6-ounce

kosher salt and ground black pepper, to taste

crumbled feta cheese ¼ cup

fresh dill, for garnish

cucumber, chopped ½ cup

1In a shallow pan set over medium heat, bring wine to a boil with a cup of water, then reduce heat to a simmer. Season salmon with salt and pepper and add to the pan.

2Let simmer, covered, until cooked through, 10 minutes. Remove salmon carefully with a fish spatula or large slotted spoon.

Stir dressing and cheese together, gently mashing the cheese crumbles until almost smooth. Mix cucumbers into dressing. Spoon over salmon and garnish with dill. Serve immediately.
