Ranch Chicken Tomato Pasta

This simple weeknight pasta recipe tosses colorful tomatoes with hearty cooked chicken, fettuccine pasta, parmesan cheese and just the right amount of HVR Seasoning to make it sing. Ingredients(8)
dry fettuccine pasta
1 pound
olive oil
2 tablespoons
garlic, minced
2 cloves
chicken, cooked, cut into ½" slices
2 cups
2 teaspoons
cherry tomatoes, halved
1 pint
shredded parmesan cheese
½ cup
optional garnish: olive oil, fresh basil

Cook pasta according to package instructions. Reserve ½ cup of pasta water. Set pasta and water aside.

In a large skillet, heat olive oil until shimmering, add garlic, sliced chicken and HVR seasoning, cook for about 2 minutes.

Add tomatoes and cook for another 5 minutes, the tomatoes will start to release a little liquid and become jammy.

Add pasta and half of the pasta water, toss until combined. Add a little more pasta water if needed, and cook for about 2–3 minutes, until mixture is heated through.

Top each portion with parmesan, a drizzle of olive oil, and fresh basil if desired.
