Smashed Ranch PickleSalad
Sometimes you want to indulge your pickle obsession in salad form, and that’s where this genius pickle salad recipe comes in. It’s got crunch to the max thanks to an ample helping of celery and — you guessed it — pickles. Mix in a little yogurt, spices and Hidden Valley® Original Ranch® and you’ve got yourself a winner.

large or 2 small stalks celery, sliced thin

small red onion, sliced thin

mayonnaise

Greek yogurt
¼ cup
white miso
3 tablespoons
buttermilk
⅓ cup
1 tablespoon
rice vinegar
1 tablespoon
minced chives
1 tablespoon

Rinse the pickles and dry completely. Quarter and smash them down with the flat side of a large knife so that the skins crack and seeds become loose.

Place the pickles in a mixing bowl with the celery and red onions and set aside. In a smaller bowl, combine the mayonnaise, Greek yogurt, white miso, buttermilk, ranch seasoning mix and rice vinegar. Stir well to combine.

When ready to serve, add the dressing a little bit at a time until pickles are well coated. You will have extra dressing, which is great on any kind of vegetables, salad or cooked meat. Garnish with chives and serve immediately.
